A variety of banana also known as Sugar Banana (or Lady Finger) - which are typically shorter than Cavendish bananas and have a characteristic tang. It is important that Lady Fingers are allowed to become fully ripe before using to enjoy their maximum flavour, as unripe Lady Fingers will taste dry and starchy. Brown flecks on the skin that has also become quite thin indicate mature ripeness and sweet flavour. Bananas are used in baking, fruit salads, fruit compotes, and to complement foods. The outer skin is partially green when sold in food markets and turns yellow when it ripens. Store at room temperature until fully ripened. Store fully ripened bananas in the fridge wrapped in newspaper and place for up to 5 days.
